Frosted Fruit Mold

I’ve been going through the recipe box that my mum put together back when she got married. Being a modern young woman, in the late ‘60s, she evidently appreciated the convenience of processed, pre-packaged foods. There is more than one Jello salad, and several casseroles incorporating canned, condensed soup.

This one is my favourite:

Frosted Fruit Mold

  • 1 3oz package lime gelatin
  • 1 cup boiling water
  • 1 7oz bottle 7-Up
  • 1 8-3/4oz can crushed pineapple
  • 1 banana, sliced
  • ¼ cup sugar
  • 1 tablespoon flour
  • 1 egg beaten
  • ½ cup whipping cream
  • ¼ cup shredded sharp processed American cheese
  • 2 tablespoon grated Parmesan

Chopped nuts are conspicuously absent; its just not Jello salad with the crunch. I especially like that she bucks tradition, calling for the more generic flavoured “gelatin”, but still falls back on brand-name soda. Also, real whipped cream (no edible oil product for Mum!), but processed American cheese. Did Velveeta even come in “sharp” flavour back then?
